I think Rurarin is editing part 5 already.

I work in grayscale setting in GIMP (Image → Mode → Grayscale. ) and then I export them as .png's. (When converting Desaturate is slightly worse as it makes more noise for me)
They are automaticaly 8bit grayscale png (256 shades of gray).
No extra settings.
I think you should keep them the same and don't save as 'optimised for web' so nothing will be lost.
The size should be similiar to not cleaned RAW .jpegs
If somebody thinks that archive would be to big...
The conversion to say 6-bit can be at done anytime using simple bath and (IIRC) PNGOUT to squeeze extra bits.

If you don't mind more nitpicking, you can change the font for
"Electric Fan for the Temporary Hakurei Shrine"
to any bold-looking font, like BD Cartoon Shout, Forte or whatever you think it's suitable.
If you don't mind, that is.
